Aren't these carrots beautiful?! We picked up a couple bunches of these yesterday at Staff of Life. They made Nia's mouth water as we wheeled by in our cart. I love when she requests things from the produce section. "Can we get some carrots, Mama? Pleeeeeeeeeese?" Oh, alright. Twist my arm, why dontcha?
Here's how we like to prepare carrots, adapted from a Deborah Madison recipe:
Nia's Roasted Carrots
Preheat the oven to 400 degrees.
Peel 2 buches of carrots, if you are so inclined. Otherwise skip to slicing them in half, the long way. Lay them in a single layer in a roasting pan. Add a handful of garlic cloves, still in their paper jackets. Sprinkle with a few fresh thyme branches. Drizzle with a generous amount of olive oil. Add salt and pepper.
Add 2 TBSP of water.
Cover with foil.
Roast for 40 minutes, or until the carrots are good and caramelized on the bottoms (this is the secret; don't be tempted to take them out too early).
